Ingredients

  • 70 g chickpea flour (available in organic grocery stores)

  • 1 pinch salt
  • 2 large ripe bananas or 3 small ones (= 180 g)
  • 70 g mild olive oil (= 70 ml) + 1 drizzle

  • 2 c. to s. vegetable cream (rice, soy, etc.)
  • 80 g unrefined caster sugar
  • 1 c. to c. heaped vanilla powder

Recipe

  1. Preheat the solar oven (this is essential for this recipe).
  2. Carefully mix the chickpea flour, cornflour, almond powder, sugar, vanilla powder, baking powder, bicarbonate and salt in a bowl.
  3. In a shallow dish, cut and mash the bananas with a fork until pureed.
  4. Add the 70 ml oil, vegetable cream and vinegar and mix well. Stir into the flour mixture.
  5. Add half the chocolate chips and stir.
  6. Oil and flour the muffin tins. Fill each mold halfway with batter (no more).

  8. Let cool before unmolding and serving.
  9. The muffins keep for up to 3 days in a tin, but are best warm.
