Solar yogurt recipe

What a pleasure to eat these yogurts! The ideal temperature for milk to coagulate is 45°C, so the solar dryer is just perfect for this recipe, which requires only time and gentle heat.

Recipe suggested by : Linda Louis – OMY solar drier – Preparation time: 10 min – Fermentation time: 8 h – Shelf life: 3 to 4 weeks

Ingredients for 9 yoghurts

  • 1 liter whole milk
  • 1 yoghurt

Preparing solar yoghurts

  • In a saucepan, bring a liter of milk to the boil (especially if it’s raw, otherwise there’s no need to boil it all the way).
  • Allow to cool to 50°C.
  • Add a yoghurt and whisk. The mixture should be between 42 and 45°C.
  • Divide between clean glass jars or a large glass container.
  • Place them in the solar dehydrator and leave to ferment for 8 hours.
  • Place the yogurts in the refrigerator for at least 4 h. They are better after 48 h.
